Upconverting DVD's on Mac

I have a 17" Macbook Pro and my screen is capable of much more than 720p video and I watch a lot of movies when I fly. I just flew to Chicago last weekend and had actually used handbrake to do some high-quality rips (I legally own all the DVD's, I just didn't want to mess with lugging them along to). They come out good, but I want to see how well I can play with them. I have a portable USB 320GB HDD (2.5") which can hold the movies. I fly to Seattle at the end of October, and given the length of the flight I wanted to have a few movies and even though I have a Blu-Ray player, I don't actually own any Blu-Rays and TSA can check the contents of your laptop whenever they want, so I'm just want to up convert the movies I legally own - which are all on DVD.

I'm thinking if I can convert them to nice 720p .mkv files I should have a good ratio of quality:size.

And, CSS decryption is not a problem and this all falls under fair use.

Any ideas?
