You are absolutely welcome to change the template colors, images, content, etc. There are no restrictions for what sort of customizations you want to make to the template. The difficulty can vary depending on your experience with web design, graphics, and working with Joomla. So depending on that it could be anywhere from very easy to very hard. Many times with you change colors of a template some of the graphics that have curves or shadows need to be re-done to be anti aliased with the new colors you are using or you will see jagged edges or colors that aren't blending correctly.
If you would like someone to make the color changes for you, during the checkout process you will notice an option that says "Changing Color Scheme" for an additional charge. That may be an easier way to go if you are unsure if you would be able to do something like that yourself.
