How to set server TimeZon

Does anyone know a way to set a server or website timezone?

I don't want to use the putenv variable for php, since this needs to be done on every script and I could miss one.

I want a way I can set the server to be permantly in the Pacific timezone and not have to worry about remembering to set it on every file on every script.

Any ideas?

Just change the servers time, using the 'date' command. If you have a control panel on the box eg: cPanel you can use that to change the server's time too.
