Upconverting DVD's on a PC

I have a similar post in the Mac forum because I would prefer to use a Mac however, that forum doesn't get much traffic.

I own an obscene amount of DVD's that I want to watch on the plane when I fly. I want to upconvert them to 720p or 1080p and rip them to .mkv files.

Anyone? Preferably free program.

I have Handbrake, but I don't think it can upconvert.
