Purpose Of A Sitemap?

I see a lot of talk about sitemaps, but I wonder what can they do for my SEO. I want to do everything I possibly can to optimize my site.
What is a sitemap for? And how do I utilize it (set it up)?
I am using a software called AbleCommerce and it utilizes an optional sitemap.

me = SEO beginner

but a sitemap would basicly be a page with links to your whole site.

meaning if a search bot hits that page is can effectivelly crawl every page of your site

Correct. But it also is a helpful tool for visitors. They can easily see a list of all the products/categories on your site.

it is also good to have meaningful words in sitemap links..
