what things can come under this category in your opinion?

Under white hat seo there come lot of things to name a few are unique content, quality back links(nt spamed websites or sites that are nt related to your theme) dnt do keyword stuffing. Its better u go and find some articles regarding this that will depict the more clear picture

Black Hat SEO = Bad and Cheating

Building links by doing site submissions to directories, se's, rss, blog , articles (manually) and wait for the results from google for that.

Google likes Good and unique content.

Don't do spamming, spam advertisements and don't use black hat seo to get the top position in google. Because by doing this your site will come up in google for temporary basis but by doing legally or good manner you will get your prize definitely.

White Hat SEO methods means generally approved by search engines, such as building content and improving site quality.
Black hat SEO methods means there are many ways to trick search engine spiders into believing they are viewing something they are not.These sites will try spamming,cloaking,hiding keywords by making the background and text the same color as well as many other little nasty tricks.
Its just a matter of time before they are caught and then google drops them from the listings for unethical porposes.

Directory submission cannot be said as directory spamming,,its totally different what you are saying.

search engine submission
link exchanging
one way link related to your business
article submission
rss reed
google sitemap
contribution in forums or signature
make blog
post comment on related topic
put your site for review in forums that way you get hits and new ideas for site.

and many more things done by research.

It's the same as black hat SEO, but they're better talkers & know how to use bleach.
