I'd suggest reading through the manual at http://www.php.net and finding a few tutorials online. Once you get the basics (up through variable types, control statements, and functions) try appling what you know to projects, then referencing the manual to look up specifics.

I don't know of any good book, you could try one of the teach yourself such and such in 27 day series by Sams I believe...

2 weeks ago i started using the tutorial on bigwebmaster (plus mysql)
and i just finished a cool quiz script, complete with scoreboard etc.. (using database)

There are 16 sample chapters from A Programmer's Introduction to PHP 4.0 available as individual pdf files at this publisher's website. You can download them or view them in your browser if you have the plug-in, but they aren't printable.
