I typed up a tutorial on how to customize your start menu icon in gnome. Please digg if you like :)

Something about needing to "killall gnome-pane" doesn't sit right with me.

Isn't there a service I can restart to do this gracefully ?
Strong with this one, the sudo is.

killall terminates all processes matching name without giving them a chance to cleanup after themselves.

I don't think using killall to restart the service is the correct way to do it.

That is the only way I've seen to restart the panels. Not even the all mighty google turned up anything else. Let me know if there is a better way.

What about logging out and logging back in so everything happens naturally ?

You could try that if you wanted. Killall is faster and is generally the preferred way to restart the panel. As far as I've seen there is no reason not to use it, it's completely safe to use on the panel. It's up to you, but that's how I do it.
