ps <user> shows current processes for <user>

Is there a way to show all processes (old and current) for a user?

what would an old process be? You mean, if you executed a program, killed it, then did ps -e, it wouldn't appear, and you'd like it to?

Yes.

Basically I'd like to generate reports on processes over the course of a day. Like a log I guess.

Linux has loads of info on logging available. I haven't got into the murky depths of it myself, but you may like to read:

Search for "logging linux" or "linux log files", and you should be able to find a scheme that'll work for you. Sorry I can't be more specific. B.
