A cron job is a way service like the windows scheduling(sp?) thing in the control pannel. It stays running, then on a certain event (like a certain time) it will run a command or script or what not, that being the "job."

I am assuming a PHP cron job would just be a cron job that would so something with a php script.

I am not aware of any 'cronjob' command within PHP; I think what you are referencing is a unix cronjob, which perhaps calls a php script at some predefined interval.
If you are on the unix console or command line;
man cron
man crontab
(Also you may need man 5 crontab, depending on which Unix you use).

you get a lot a flexibility with cron as well, you can run something every monday afternoon,
at noon the 1st of everymonth, at midnight every week-day and twice on statuday and sunday,
every hour on the hour,every five minutes during working hours, etc...
