Well the difference between version of Redhat for instance are bug fixes, and newer software packages introduced, like newer versions of Apache, and newer versions of the kernel, etc.

As far as the difference between like Redhat Linux, versus Debian Linux, and others, its mostly just their personal touches to the software. Linux source code is open source to anybody, so organizations can get ahold of this source code and then apply their personal touches to them.
