I was wondering if anyone know where the video files are kept when you watch Youtube or any other site that offers streaming.

The files are on the computer somewhere due to the fact that once it has completely buffered itself you can disconnect and watch it.

Option:
Internet Temp. file

Hidden
and possible undo hidden file from regedit?

You can see the temp file in the following location:C:\Documents and Settings\User Name\Local Settings\Temp
But, as far as I know, you can't save the temp, in spite you can download them via a software called "Orbit Downloader".
